
Chestnut Honey
Chestnut tree honey has a strong character that takes its rich and sweet scent from its ligneous and discreet bitter taste. Its color is dark amberish. It stays liquid for many months and its crystallization is probable after one year, dependent on the conditions of conservation and its mixture with other honeys. Pelion is characterized by its thick forestation, abundant waters and steep slopes that drop to the sea. In this environment we position our beehives at an altitude of 1000m in the north side of the mountain that overlooks the Aegean, between dense forests of wild chestnut trees.
Chestnut trees bloom from the end of May until the beginning of July. At this period and due to the onset of spring, chestnut honey is complemented with wildflowers, herbs, and mountain teas, in proportions that differ from year to year and enrich its flavor and taste. Right after this natural enrichment process it is harvested and it reaches your table.
